The South Pinot Noir is sourced entirely from the Upper Derwent Valley. Made with 25% whole clusters (stems included), but all of the fruit, even the destemmed portion, is kept as whole berries. This prompts the initial part of the fermentation to start inside the berry, and without access to oxygen, which promotes a sense of lifted freshness and clarity of fruit. No new oak was harmed in the making of this wine.

This wine pairs well with roasted chicken and turkey.
