The 2020 Castelli Estate Il Liris Chardonnay hails from Denmark in the Great Southern region of Australia. As a flagship Chardonnay, it reflects the cool-climate terroir beautifully. Here are some tasting notes for this elegant wine: Colour: Bright pale gold. Aroma: Fresh apricot, peppery honeysuckle blossom, buttered toast, and hints of nutty marzipan. Palate: Complex yet elegant, with flavours of green apple, pithy lemon zest, more buttered toast, and rounded marzipan notes. This wine has excellent aging potential up to 20 years!

Chardonnay is a perfect wine to pair with fresh white fish or fresh shellfish (oysters with a splash of lemon juice are a big tick), and grilled prawns with a fresh citrus sauce will also be a winner too. Vietnamese-style chicken salad is also a great pairing if you're feeling something more substantial too.
