This Yarra Valley chardy is pleasantly mineral and low-key, with cut red apple and pear notes elevated by a tart lemon-curd acidity. Handpicked ruit from the various subregions of the Yarra combine here to give a full picture of the region's terroir. Even Chardonnay skeptics might be into this one!
Winemakers Comments
In Dreams Chardonnay is all about balance and purity of fruit. We carefully select grapes from vineyards in Woori Yallock and Yarra Junction in the cool Upper Yarra, for their minerality and vibrancy. This is complimented by parcels selected from the far north-west corner of the Valley in the rolling hills of St Andrews, as well some warmer sites in Yarra Glen.
Altitudes vary from 130m above sea level to 240m, and soil types include both red volcanic loams and grey clay loams overlying mudstone. Clonal components of I10V5, Bernard 76, P58 and I10V1.
Hand-picked and whole bunch pressed to French oak barrels for an indigenous fermentation. Malo-lactic fermentation is discouraged by adding sulphur after the primary ferment. No battonage is carried out during the 10 months on lees in barrel and the wine is bottled without any fining.
Pale straw in colour with white flowers, wet rock, lime and a dash of nutty oak on the nose. The palate shows lemon notes and a pleasant saline character. Just enough weight to support the sizzle of acid drive, and oak phenolics add support without overwhelming the fruit. So pure!
About the Winery
In Dreams, founded just 10 years ago by winemaker Nina Stocker and now in the capable hands of veteran winemaker Anthony Fikkers, are Yarra-based exponents of deliberately minimal-intervention winemaking. Focusing on just two varietal wines, In Dreams used handpicked fruit exclusively, largely eschew the use of new oak, and bottle their wine unfined, allowing the fruit and terroir to shine.
