There is a complexity to this sauce that goes beyond its intense Carolina Reaper heat. It starts with a nice smooth texture and then moves into the upfront flavours of mango and ginger and then there is a subtly sweet orange finish. You then are rewarded with the Carolina Reaper, the full heat of which kicks in a little bit later at the back of the throat to provide a more than satisfying heat to finish off a delicious sauce. For a reaper sauce it is a great all-rounder and use it where you feel you can handle it. It is great drizzled over pizza or if your game on bacon and eggs for breakfast.
